« Summary: The current Tunisian food system is the result of a series of agricultural and food industry policy choices which were based on export development and food security in the aftermath of independence. It was also affected by the harsh ordeal of globalisation and the hegemony of standardisation of supply in the 1990s. This food system has undergone an evolution which now justifies a growing interest in the establishment of a sustainable territorialised food system. »
